Oven Roasted Buffalo Hot Wings with Blue Cheese Dip
If wings are your thing, you will love this recipe. The key to making them oven crisp is baking on high heat at 425, and finishing them under the broiler to crisp up the skin. A great and healthy alternative to deep frying.
Oven Roasted Buffalo Hot Wings
4 pounds of fresh chicken flat wings and drummettes
1/2 cup olive oil
2 tbspn Colgin’s liquid smoke (plus 1 tspn for sauce)
1 cup hot sauce (I like Cholula, though your favorite is fine)
1 stick butter
1 tspn salt
1 tspn black pepper
1 tspn smoked paprika (optional)
1 tspn garlic powder (optional)
Preheat oven to 425 degrees. While oven is preheating, pour wings in a bowl and toss with olive oil, liquid smoke, salt, pepper, garlic powder, and smoked paprika. Lay wings flat on a large steel half pan (cookie sheet). Place in the oven and let cook for about 1 hour, turning wings over halfway and draining off any excess liquid in pan. The last 3 to 5 minutes of cooking, turn your broiler on high and let skin crisp up on wings a little, turning over to crisp both sides.
Right before wings are about finished cooking, in a small pot, melt butter. Add in hot sauce, 1 tspn of liquid smoke, and the juice of 1 fresh squeezed lime. Let come to a boil, then take off heat. Once wings are finished from final broil, transfer wings to a large bowl and pour warm hot sauce mixture over wings, tossing to coat. Serve on a bed of tortilla chips, or eat them on their own with vegetables, dip, or a salad. Enjoy!
Homemade Blue Cheese Dip
4 ounces of blue cheese (I prefer Roquefort or any nice quality chunk that is creamy when crumbled)
2 ounces of sour cream
2 tbspn mayonnaise
2 tbspn red wine vinegar
In a bowl, crumble up chunks of blue cheese with your fingers. Add in the sour cream, mayonnaise, and red wine vinegar. With the back of a spoon, mash and mix up blue cheese mixture until creamy, leaving some chunks of blue cheese. May add a little more sour cream if you desire it less chunky and more creamy. Serve with your favorite fresh vegetables of celery sticks, carrot sticks, broccoli florets, cucumbers, or the like. Enjoy!
