*You can find Pamela’s Products baking and pancake mix at your well stocked health food store like Whole Foods or Earthfare. It usually comes in a 4 pound bag and is great and versatile for baking gluten free.
2 cups Pamela’s Product’s Baking & Pancake Mix
2 tsp cinnamon
1 tsp salt
1/2 tsp nutmeg
1/2 tsp allspice
2 cups of grated granny smith apples (with core removed)
1/4 cup vegetable oil (or can use melted coconut oil)
1/2 cup brown sugar, packed
1/2 cup white sugar
2 tsp vanilla
1/2 cup walnuts, chopped
1/2 cup raisins
Confectioner’s sugar, for dusting
Whisk together Pamela’s Baking & Pancake Mix, cinnamon, salt, allspice, and nutmeg. In a separate bowl, beat together eggs, oil, and sugar for one minute on medium. Stir in vanilla. Stir wet ingredients into dry ingredients to form a batter. Fold in apples, along with chopped nuts and raisins.
Pour into greased 8×4 inch loaf pan and bake in a preheated 350° oven for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Let loaf cool in the pan for 5 minutes before removing to cool. Lightly dust top of cake with confectioner’s sugar. Enjoy!
