Ode to Victoria’s Cafe

I’m taking a trip down memory meal lane today. One of my favorite cafe spots to have lunch closed their doors this week, and all I could think about were those delicacies on the other side I would miss. I usually ordered the chicken salad, pumpkin bread, loaded baked potatoe salad, and one other thing they were absolutely famous for…strawberry pretzel salad. What’s a girl to do, I pondered, while sipping like Kermit on a cup of fruit mint tea? Lol!

Well recreating parts of that meal IS my business today, the gluten-free way. I’m about to get in the kitchen and prepare chicken salad, gluten-free pumpkin bread, and fresh fruit salad, along with fruit mint tea. Not my typical Sunday dinner, but one that is fitting on this somewhat cool summer day. I’ll start by roasting a couple of chickens to make the homemade chicken salad, while working on my loaf of pumpkin bread. To cut down on sweetness, I have coconut palm sugar I will be substituting brown sugar for today. Oh, I can’t wait!

By evening, I will be sitting on my patio enjoying my nostalgic meal on clear plates set on a monkey tablecloth, looking around the room at all the regulars that would frequent there. I may just leave with a jar of homemade pickles…
