This chicken was unbelievably good! The fresh parsley, chives, garlic, and butter spread under the skin really took this bird to a whole ‘nother level. So moist and juicy on the inside, with nice crispy skin on the outside. The potatoes and onions roasted down, bathed in all that buttery juice from the chicken. I literally stood by the stove eating the roasted potatoes right out the pan. This chicken paired so well with the Creamed Baby Spinach. Two thumbs up! My palate was so pleased that I vowed to at least make this roasted chicken once a week. I could definitely get with this!
