Gluten free Pumpkin Waffles

Just too much yumminess for one Sunday morning. If I gave you my recipe, it would be criminal. Just imagine what you could do good with cinnamon, vanilla bean paste, brown sugar, and pumpkin, to name a few, and you are close!

It’s Sunday, so that means family breakfast. The sun is shining, and while some are out enjoying the beautiful morning on the patio, I’m in the kitchen about to whip up yumminess. What are you cooking up this morning?

Perfect Nightcap: Pomegranate green tea and Chamomile

I look forward to bedtime to unwind with a cup of tea. Tulsi makes an incredible collection of teas, and this pomegranate green tea happens to be my favorite. To make a delicious cup, I steep 2 bags of the pomegranate with 1 bag of Chamomile. I then add raw honey to sweeten, and thin slices of lemon. I cover with foil and let steep in my cup for about 10 minutes, then enjoy. It is heaven in a cup. I am left feeling so relaxed, and usually I am drifting off to the land of sweet dreams in a matter of moments, which tonight will be extra special as I hear raindrops…

Fresh herb Roasted Organic Chicken

This chicken was unbelievably good! The fresh parsley, chives, garlic, and butter spread under the skin really took this bird to a whole ‘nother level. So moist and juicy on the inside, with nice crispy skin on the outside. The potatoes and onions roasted down, bathed in all that buttery juice from the chicken. I literally stood by the stove eating the roasted potatoes right out the pan. This chicken paired so well with the Creamed Baby Spinach. Two thumbs up! My palate was so pleased that I vowed to at least make this roasted chicken once a week. I could definitely get with this!

Fresh herb Roasted Organic Chicken…in the making

Fresh chicken about to go in the oven. There are a plethora of herb roasted chicken combinations that you can play with just by changing up the fresh herbs, but today I was feeling savory, so I used fresh parsley, fresh chives, organic butter, and garlic cloves, with a drizzle of olive oil. I seasoned my organic bird on both sides liberally with salt and pepper, a little sprinkle of garlic powder, then gently spread the herb butter mixture under the skin of the bird, then all over. I also cut up potatoes and onions to roast along with the bird, soaking in all those good buttery juices. Now in the oven it goes to roast up. As a side dish, I am making Creamed Baby Spinach. Isn’t that enough to make you swallow?!

See you in a few, when this bird is ready. This will be some good eating today, folks…
