Parmesan Encrusted Cod…in the making

Parmesan Encrusted Cod, about to go in the oven. That’s what is up for dinner today. Usually I am out somewhere on a Friday enjoying a steak for lunch (I know, I can’t help it, I’m a red meat girl), but while I happened to be at Earth Fare and saw wild caught cod on sale for $6 a pound, I opted to pick up a couple of pounds and have fish today for dinner. I used Udi’s gluten free bread for fresh bread crumbs, then added spices, butter, and Parmesan to make the crust topping. A little drizzle of olive oil, and in the oven it will go. As I am sitting here writing this, the smell coming from the oven is divine! I will serve this was just mixed vegetable medley of broccoli, cauliflower, and carrots. Can’t wait to dig in. This is my idea of a grown up version of fish sticks. 🙂
