Smothered hashbrown pork chops

My house smells like home. I had to get dinner on the table quick today, and thought I would share my recipe for these delicious chops. These are boneless chops seasoned with salt, pepper, and dusted with gluten free flour, then quickly seared on both sides for about a minute each until outside coating is brown in a deep skillet coated with olive oil. I then brown shredded hash browns and thinly sliced onions together in a little olive oil and ghee, top by big spoonfuls on top of chops, sprinkle tops of each with dried onion mix, then liberally pour beef stock over everything, making sure to saturate the hash brown mixture on top, cover with a lid, then bake in oven on 350 for 1-1/2 until fork tender. I do like to remove the lid the last 15 minutes to allow the hash browns to brown a little more. I’ll serve this with sautéed French style green beans and roasted zucchini and squash.
