Pasta Fagioli Soup

Soup’s on in the kitchen today. I happen to love Olive Garden’s pasta Fagioli soup, and have been hard pressed to find a recipe that nails it, until now! I like scouring the web for favorite restaurant recipes that I can recreate at home. So far, I’ve nailed the shrimp scampi and cheddar cheese biscuits from Red Lobster, the broccoli cheddar soup from Panera Bread, and this pasta Fagioli soup from Olive Garden. I wish you could smell my kitchen now. The aroma of that soup simmering is reminiscent of me sitting on my lunch break at OG enjoying bowl after bowl of this soup. (I make sure to get my $6.95 unlimited soup, salad and breadsticks’ worth). Lol! Now I can savor this at home, and you can too, as I have included the recipe as a link. As I am making this gluten free, I will either add GF pasta, or leave it off (depending on what I’m in the mood for). I do recommend adding the pasta in close to the end of cooking time so that it retains it’s texture. And make sure to top off this soup with freshly grated Parmesan Regianno. Can we say perfection?! Now if I can recreate that salad…
