What’s cooking this Sunday? Meatloaf, Pinto Beans, Cornbread, and Peach cobbler

Hello on this glorious morning! The sweet sound of worship is permeating the house as I prepare our Sunday dinner. Today, I thought I would fix my husband’s favorite – meatloaf. And nothing goes better with it but a good pot of pinto beans simmered with a honey baked hambone.

Back to the meatloaf…I like to form three mini loaves in one dish, that way it cooks quicker and more evenly, and we usually have a whole one for leftovers the next day. I make mine the old fashioned way with ground chuck, bell pepper, onions, breadcrumbs, eggs, tomato sauce, seasonings, and a glaze made of ketchup and brown sugar. To make it gluten-free, I used Udi’s bread that I ground up to make fresh breadcrumbs. Works beautifully. Now off to put these in the oven to bake. Dinner is just around the corner! Get the chow-chow and the sliced onions and tomatoes together, because it’s about to get real. 🙂
