”Hey, Mon!” What’s for dinner?

Want to know what’s cooking?  Jamaican rice with pigeon peas, ”Mon!”  What you see is the fresh thyme that will simmer down into the most flavorful, fluffy, rice and hearty pigeon peas, along a backdrop of coconut milk, chicken stock, fresh grated ginger, and habanero pepper for a little kick.  Paired with fried plaintains and Carribean jerk wings I am cooking, I say we are on our way to Carribean soulfood indeed! 🙂
