  1. So I tried to make a pound cake subing this mix for flour: 2 cups sugar, 2 cups mix, 2 sticks butter, 5 eggs. It overflowed by 10″ bunt pan, caused a mess in my oven, then fell to less than 1/4 of the pan. It wasn’t fully cooked but tasted fabulously! I want to try again but I’m not sure what went wrong. Something in the mix made it rise too much…would Pamela’s bread mix be a better option. Thanks in advance 🙂

    1. Gluten free flour does not perform exactly the same as regular flour in recipes, so the conversion is not the same, even among brands and types of gluten free flours. I find that if I am baking with a gluten free baking flour, I have to use a recipe already specifically tested and engineered for it’s use. I have not attempted yet baking a pound cake with gluten free flour, but if I did, I would opt to try King Arthur’s multipurpose GF flour as I have used their regular cake flour for pound cake and it turned out beautiful. Pamela’s baking mix has wonderful recipes for cakes/breads on the back of their bags and on their site. Try the one for sour cream coffee cake. Yum! Hope this helps!
