Marinara sauce, from scratch.

image

Days like this make me feel so industrious.  9 quarts of marinara from scratch, ready for the freezer, using Italian San Marzano tomatoes and fresh organic ingredients.  Such a beautiful 2 hour labor of love, but so worth it.  Thanks Giadia DeLaurentis for the best recipe ever for marinara.  Check out the recipe here on the blog.  It is perfection!

Raisin pecan oatmeal cookies…in the making.

image

The cookie monster in me has come out!  About to put these homemade raisin pecan oatmeal cookies in the oven while I’m still nibbling on the chocolate chip cookies fresh from the oven.  I just might start selling cookie dough…they are just that good right off the spoon! 🙂

I present to you…Jamaican rice and pigeon peas.

The finished product…Jamaican rice with pigeon peas.  Who needs a rice cooker?  Not me, I’m just good like that. Lol!

Don’t pass up those plaintains!

image

These are how ripe plaintains should be, actually could be a little darker, with a slight firmness without being too mushy.  Slice and fry in some coconut oil, with a sprinkle of cinnamon for good measure, and you are in for the best sweet, wholesomely, delicious treat that $3 can buy!  I can’t wait to eat these golden gems. 🙂

”Hey, Mon!” What’s for dinner?

image

Want to know what’s cooking?  Jamaican rice with pigeon peas, ”Mon!”  What you see is the fresh thyme that will simmer down into the most flavorful, fluffy, rice and hearty pigeon peas, along a backdrop of coconut milk, chicken stock, fresh grated ginger, and habanero pepper for a little kick.  Paired with fried plaintains and Carribean jerk wings I am cooking, I say we are on our way to Carribean soulfood indeed! 🙂
