“Eating Good – Daniel Style” Day 11 – Olive Oil

Today I want to introduce you to one of my best friends – extra virgin olive oil.  This is the most important staple in my kitchen, and the most healthiest oil that you can use in your dishes.  Since it is my prized possession, I do not skimp on quality, so I splurge and pay extra for a very good bottle of EVOO (extra-virgin olive oil).  Use it to saute your vegetables in, rub your meats in before seasoning, and to make a light dressing over salads.  And use it as a dip with fresh cracked black pepper for your favorite Italian bread – perfection!  I want to share this link outlining all the health benefits and background info on this amazing oil.  I am happy to report that I boast a healthy total cholesterol level with a high HDL (the healthy cholesterol) in my body because of consuming olive oil in my cooking – the highest my doctor stated to me she has ever seen in one of her patients!  Now that’s good news!  Take a peek at the link, and go out and buy you a bottle to start using in your kitchen.  Just make sure it says “extra-virgin olive oil” and comes in a dark bottle (as the quality of oil is better protected from light oxidation).
