“Eating Good – Daniel Style!” Day 10

Today marks the halway mark in the journey.  I am spending today cleaning house and tying up a few loose ends of homework and business as I am gearing up for a catering event next month.  So happy today is a free day for me from cooking!  Yay!  With that said, Sunday dinner is in my focus and this girl is craving some soul food 🙂

Make Sunday dinner tomorrow all about hearty comfort foods.  You know… greens, mashed potatoes, sweet potatoes, niblet corn, cabbage, beans, peas, all that good stuff that screams “sustenance.”  Use vegetable stock and Earth Balance butter to make your mashed potatoes (can add a little rice or coconut milk to make it more creamier, cook up some vegetarian greens with baked sweet potatoes with cinnamon and vegan butter, or just whatever you are in the mood for.  Check my blog recipes and formulate your own grand meal.  Here is what I am having tomorrow:

Smothered cabbage

Sweet Potato Hash (recipe on link)

Fried okra (using stone-ground cormeal sauteed in vegetable oil)

Fresh corn

Sliced tomatoes and onions drizzled in olive oil and balsamic vinegar, seasoned with salt and pepper
