So what did you do this weekend? I hope shopping, prepping, and cooking! With a busy week ahead, I knew that if I did not get a few meals under my belt, I would end up settling for a throw together meal that would proabably not satisfy. My philosophy in the kitchen is cook once – eat twice…or thrice! Here is what I cooked on Sunday night:
1. Homemade marinara sauce. I used a 106 oz can of peeled tomatoes that I crushed (San Marzano tomatoes are stellar!) After adding in all the other ingredients and simmering, this yielded me 3 quart sized freezer bags of beautiful marinara sauce ready to make any pasta proud to be drenched in. I put one in the fridge, two in the freezer.

2. Sauteed spinach and garlic, fried plaintains, and steamed brown rice. While the rice was steaming in the rice cooker (which I love), I whipped up the other two dishes. You should have saw the beehive my family made with their lunch plates to pack up – each man for his own here). This yielded me lunch for them today at school/work and dinner for this evening.
All in all, this mere 2 hours in the kitchen yielded me 5 potential meals. I left the kitchen and went to bed with the satisfaction of knowing that I had used my time wisely, and that I had meals to look forward to consuming – all with the added benefit of having an extra day or two off in the week to rest from cooking. After all, I deserve it…and you will too 😉
